CARLS Brasserie combines typical French brasserie style with a fantastic view of Hamburg’s port. Chef de cuisine Michel Rinkert is an expert in the classic French dishes of his home country and north German dishes with that certain something. The view over the harbour adds a flavour of Hamburg.

Carls Bistro has its own unique French charm with plenty of light pine, an open-plan kitchen and floor-to-ceiling shelves. Our CARLS Bistro tartines are made from tasty rustic organic bread with select ingredients and a tantalising mix of tastes.

The native Italian Osvaldo Ferilli has learned the gastronomy from the beginning and is a host all through. Ferilli has been living in Hamburg for more than 30 years and is not an unknown face. He has already run several well-known restaurants in the Hanseatic city.
He inherited his passion for cooking from his grandmother and cultivates his love of superb ingredients each and every day. Born in Alsace, this chef de cuisine likes to add a touch of France to North-German cuisine.
